If you know me or my blog at all you know I love meal prepping. That doesn’t mean I love to spend hours in the kitchen though! Cutting and cooking can take awhile, but sometimes dishes take even longer!
Okay I’m being dramatic, but the best way to minimize cooking time AND cleaning time? One pot meals.
I’ve found myself searching for one pot meals quite often these days because they’re always so easy. I have tried quite a few and wanted to share them with you!
Veggie and Wild Rice Soup

This soup is healthy and full of yummy flavors. When I made this I didn’t use any miso, but it still tastes amazing. White beans are my favorite (I use Great Northern Beans). Who doesn’t love a good soup and bread combo anyway?

Vegan Red Lentil Dal

I’ve made this lentil dal probably 20+ times now. I LOVE it and it’s so easy and quick to make. I prepared it exactly how she did, served it with rice and arugula, then topped it with balsamic vinegar and it’s so comforting and delicious.

Creamy Tomato Basil Lentil Pasta

Just LOOK at it! It’s creamy and effortless and you won’t regret making it! You could probably use regular pasta, but the lentil pasta adds more flavor, texture, and creaminess and that is the only way I have tried it. This pasta dish is best eaten fresh, because when I meal prep it and eat it throughout the week, it does lose it’s creaminess but not it’s flavor.
I’ve made this dish at least 5 times, but never took a photo, I’ll add one as soon as I make it again!
Italian Orzo Spinach Soup

Another soup dish that’s filled with flavor. As most soups are, this meal is very comforting. She uses fire-roasted tomatoes to add some spice which I love, but all the ingredients can easily be modified to fit your preferences!

Lasagna Soup

This lasagna soup is actually vegetarian but it can easily be made vegan. I excluded mushrooms (because I don’t like them much). I also added vegan meatballs to mine so it’s kind of like a lasagna/spaghetti soup! I only have a photo of the soup cooking, but not the final result.

Coconut Curried Sweet Potato and Chickpea Stew

This dish is one of my favorite meals, especially when you squeeze fresh lime on it. *Drool* I can never find red chili at my grocery store so I replace that with one jalapeño and it’s still amazing. This is a curry, so the spices are VERY important and allowing it to simmer for half an hour or more gives the best flavor. I always eat this with Jasmine rice and it’s perfect.

I always use these for meal prepping because it saves me even more time. But these are perfect for a family dinner with leftovers too. Give these a try and I’m sure you’ll love them too!
By the way…this is a FitPacker meal prep container and I love them, I’ve had the same ones since 2016!
